Bruschetta Chicken

INGREDIENTS
Chicken- 1 pack of Sadia Pepper Grilled Chicken Breast
- 1/2 lemon, squeezed, divided into 2 servings
- Kosher salt, to taste
- 1 tsp of Italian seasoning or dried oregano
- 1 tomato, diced
- 2 cloves garlic, finely chopped
- 1 tbsp freshly chopped basil
- mozzarella cheese, use as much or as little as you prefer
- Freshly grated Parmesan
METHOD
- Prepare the Bruschetta Toppings: In a small bowl, combine tomatoes, finely chopped garlic, fresh basil, and half of the lemon juice. Mix everything until well combined. Season with salt and pepper to taste, then set aside to allow flavours to combine.
- Heat a pan over medium heat, then add the thawed Sadia Pepper Grilled Chicken Breast. Pan-fry for about 3 minutes, turning occasionally to ensure even heating and a light crisp on both sides.
- While the Sadia Pepper Grilled Chicken is still heating, top each breast with mozzarella cheese according to preference. Cover the pan until the cheese is melted.
- Remove the Sadia Pepper Grilled Chicken with melted cheese from the pan and place it on a plate. Top with the Bruschetta Topping, garnish with Parmesan, and serve. Enjoy!
