Butternut Squash

INGREDIENTS

Chicken Breast
  • 1 pack of Sadia Chicken Boneless Leg 
Ingredients
  • 1/4 cup flour 
  • 3 tbsp parmesean, grated
  • 1/2 tsp salt 
  • 1/2 tsp pepper
  • 1 tsp paprika
  • 3 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cups butternut squash, diced
  • 1 tsp minced garlic
  • 1 tsp dried oregano
  • 2 cups green beans, cut in half
Garnishing 
  • 1 tbsp fresh thyme 
  • 1 lemon, sliced
  • 1 tbsp Parmesean, grated

METHOD

  1. Firstly, cut the Sadia Chicken Boneless Leg into 2-3 pieces. 
  2. In a shallow bowl, mix flour, parmesan, salt, pepper, and 1/2 teaspoon paprika. Place the chicken pieces between 2 sheets of plastic wrap and pound them with a rolling pin into a thin layer. 
  3. Next, use your hands to rub 1 tablespoon olive oil all over the chicken (divided between both sides), then dredge in flour mixture until evenly coated.
  4. Next, heat 2 tablespoons olive oil and 1 tablespoon butter in a pan over medium-high heat. Add half the chicken pieces to the pan and cook for 3–4 minutes on the first side until golden brown.
  5. Flip and cook for 1–2 minutes on the other side. Transfer chicken to a plate and sprinkle each piece with a tiny pinch of salt.
  6. Next, add 3 tablespoons butter to a skillet, turn heat to high, and add the butternut squash, garlic, paprika, and oregano.
  7. Stir these ingredients together and cook for 4-5 minutes until slightly charred.
  8. Stir once again, then add the green beans. Spread in an even layer again and cook until the vegetables are crisp. 
  9. On a plate, add the chicken followed by the veggies. Drizzle with lemon juice and garnish with Parmesan and thyme.
  10. Enjoy!
