Butternut Squash

INGREDIENTS
Chicken Breast- 1 pack of Sadia Chicken Boneless Leg
- 1/4 cup flour
- 3 tbsp parmesean, grated
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp paprika
- 3 tbsp olive oil
- 3 tbsp unsalted butter
- 4 cups butternut squash, diced
- 1 tsp minced garlic
- 1 tsp dried oregano
- 2 cups green beans, cut in half
- 1 tbsp fresh thyme
- 1 lemon, sliced
- 1 tbsp Parmesean, grated
METHOD
- Firstly, cut the Sadia Chicken Boneless Leg into 2-3 pieces.
- In a shallow bowl, mix flour, parmesan, salt, pepper, and 1/2 teaspoon paprika. Place the chicken pieces between 2 sheets of plastic wrap and pound them with a rolling pin into a thin layer.
- Next, use your hands to rub 1 tablespoon olive oil all over the chicken (divided between both sides), then dredge in flour mixture until evenly coated.
- Next, heat 2 tablespoons olive oil and 1 tablespoon butter in a pan over medium-high heat. Add half the chicken pieces to the pan and cook for 3–4 minutes on the first side until golden brown.
- Flip and cook for 1–2 minutes on the other side. Transfer chicken to a plate and sprinkle each piece with a tiny pinch of salt.
- Next, add 3 tablespoons butter to a skillet, turn heat to high, and add the butternut squash, garlic, paprika, and oregano.
- Stir these ingredients together and cook for 4-5 minutes until slightly charred.
- Stir once again, then add the green beans. Spread in an even layer again and cook until the vegetables are crisp.
- On a plate, add the chicken followed by the veggies. Drizzle with lemon juice and garnish with Parmesan and thyme.
