Chicken Masala Rolls

INGREDIENTS
Chicken- 1 pack of Sadia Chicken Breast, thawed
Ingredients
- 1/2 lemon, juiced
- 1 clove garlic, minced
- 1 tbsp garam masala
- 1/2 tsp of cayenne powder
- 2 tsp of smoked paprika
- 1 tsp salt
- 4 tbsp olive oil
- 1 medium white onion, chopped
- 8 spring roll wrappers
- 1 egg, beaten
Sauce
- 1 clove garlic, minced
- 1 tbsp garam masala
- 2 tsp smoked paprika
- 1 cup of diced canned tomatoes (unsalted)
- 1/2 cup of heavy cream
- Salt to taste
- 2 tbsp salted butter
Garnishing
- Parsley
METHOD
- First, to marinate the Sadia Chicken Breast, combine lemon juice, garlic, garam masala, cayenne pepper, smoked paprika and salt in a large freezer bag. Mix the ingredients well to coat the chicken evenly, then set it aside for at least 10 minutes.
- Next, add olive oil over medium heat in a large saucepan followed by the onions. Cook for about 10 minutes until the onions are translucent and fragrant.
- Once the onions are cooked, prepare the sauce by adding the minced garlic, garam masala, smoked paprika, tomatoes, heavy cream, butter and salt into the saucepan. Sauté for 2 minutes then set it aside.
- In the same saucepan, add some olive oil and the marinated chicken. Cook well on each side and till lightly brown. Once chicken is cooked, add in the sauce and mix well.
- Cover to simmer for 30 minutes over low heat. After simmering, remove from heat and shred the chicken to fit into the rolls. Take one sheet of spring roll wrapper and place it on a cooking board like a diamond.
- Place a few pieces of shredded chicken and a little bit of the sauce in the center of the wrapper. Flip over the bottom corner to cover the chicken, squeeze it towards you to make it tight. Fold in the sides and continue rolling away from you.
- To seal the roll, apply some egg wash along the edges and roll up to seal it. Repeat for the rest of the chicken rolls.
- Once done, air fry the wrappers at 180°C for about 10 minutes, flipping the rolls in between after 5 minutes in.
- To serve, place the remaining sauce on the side for dipping. Add the chicken rolls on a plate and garnish with some parsley. Enjoy!
