Chicken Potato Skins

INGREDIENTS

Chicken 
  • 1 pack of Sadia Chicken Breast
Ingredients 
  • 2 large baking potatoes
  • 1 tbsp sriracha sauce 
  • 1½ cup mozzarella cheese, shredded
  • 1 ½ cups cheddar cheese, shredded
  • 1 cup cream cheese, softened
Garnishing
  • Parsley, chopped

METHOD

  1. Firstly, preheat the oven to 200˚C. Then, wash the potatoes and pat them dry followed by cutting them in half lengthwise. 
  2. Once cut, add the potatoes on a baking sheet and place them in the oven for 15 minutes. In the meantime, boil the Sadia Chicken Breast. 
  3. Once cooked, shred the chicken in a bowl. Then, add the hot sauce, mozzarella cheese, cheddar cheese, cream cheese and mix them together.
  4. Remove the cooked potatoes from the oven and scoop out the potato flesh.
  5. Brush the insides of the potato skins with the olive oil. Once done, place the skins on the baking sheet, and bake for another 10 minutes.
  6. Fill each potato skin with the mixture and top with some of the shredded cheese.  
  7. Bake the potato skins for about 15 minutes until cheese is browned and crispy.
  8. Finally, remove from oven and garnish with some parsley. Serve on a plate and enjoy!
