Chicken Potato Skins

INGREDIENTS
Chicken- 1 pack of Sadia Chicken Breast
- 2 large baking potatoes
- 1 tbsp sriracha sauce
- 1½ cup mozzarella cheese, shredded
- 1 ½ cups cheddar cheese, shredded
- 1 cup cream cheese, softened
- Parsley, chopped
METHOD
- Firstly, preheat the oven to 200˚C. Then, wash the potatoes and pat them dry followed by cutting them in half lengthwise.
- Once cut, add the potatoes on a baking sheet and place them in the oven for 15 minutes. In the meantime, boil the Sadia Chicken Breast.
- Once cooked, shred the chicken in a bowl. Then, add the hot sauce, mozzarella cheese, cheddar cheese, cream cheese and mix them together.
- Remove the cooked potatoes from the oven and scoop out the potato flesh.
- Brush the insides of the potato skins with the olive oil. Once done, place the skins on the baking sheet, and bake for another 10 minutes.
- Fill each potato skin with the mixture and top with some of the shredded cheese.
- Bake the potato skins for about 15 minutes until cheese is browned and crispy.
- Finally, remove from oven and garnish with some parsley. Serve on a plate and enjoy!
