Creamy Coconut Curry Chicken Fillet

INGREDIENTS

Ingredients
  • 1 can coconut milk
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 tbsp ginger (grated)
  • 2 tbsp curry powder
  • 1 tbsp tomato paste
  • 1 cup sweet potatoes (cubed)
  • 1 cup spinach leaves
  • 1 tbsp cooking oil
  • Salt and pepper to taste

METHOD

  1. Heat cooking oil in a deep skillet over medium heat. Saute onion, garlic, and ginger until fragrant.
  2. Add the chicken fillet slices and cook until lightly browned.
  3. Stir in curry powder and tomato paste, ensuring the chicken is evenly coated. 
  4. Pour in the coconut milk and bring to a gentle simmer. Add sweet potatoes and cook for 15 minutes or until tender.
  5. Toss in the spinach leaves, season with salt and pepper, and simmer for an additional 2 minutes.
  6. Serve the curry hot with jasmine rice or naan bread for a hearty, unique dish.
