Creamy Coconut Curry Chicken Fillet

Chicken- Sadia One-by-one Chicken Fillets
Ingredients
- 1 can coconut milk
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 tbsp ginger (grated)
- 2 tbsp curry powder
- 1 tbsp tomato paste
- 1 cup sweet potatoes (cubed)
- 1 cup spinach leaves
- 1 tbsp cooking oil
- Salt and pepper to taste
METHOD
- Heat cooking oil in a deep skillet over medium heat. Saute onion, garlic, and ginger until fragrant.
- Add the chicken fillet slices and cook until lightly browned.
- Stir in curry powder and tomato paste, ensuring the chicken is evenly coated.
- Pour in the coconut milk and bring to a gentle simmer. Add sweet potatoes and cook for 15 minutes or until tender.
- Toss in the spinach leaves, season with salt and pepper, and simmer for an additional 2 minutes.
- Serve the curry hot with jasmine rice or naan bread for a hearty, unique dish.
