Crispy Chicken Rice Bites

INGREDIENTS
Chicken- 1 pack of Sadia Chicken Boneless Leg
- 1 cup sushi rice (dry)
- 1 tbsp rice vinegar
- 1½ tsp sugar
- Pinch of salt
- 5 tbsp teriyaki sauce
- 2 tbsp cream cheese
- 1 scallion, chopped
- 1 tbsp spicy mayo
- 1 tsp oil
- 2 tbsp chives or spring onions, sliced
METHOD
- To begin, start with boiling the Sadia Chicken Boneless Leg according to the package instructions.
- Once done, transfer the boiled chicken into a bowl and shred the chicken.
- In a pan, mix the shredded chicken with about 3 tbsp of the teriyaki sauce on low heat. Once cooled, add to a bowl with other ingredients and mix until combined.
- Cook the rice according to your sushi rice package. Once cooked, mix in sugar and rice vinegar and stir in another bowl.
- Then, cut into squares and shallow fry in some high heat oil in a pan.
- Place the chicken mixture on top of each crispy rice evenly.
- Top with teriyaki sauce, spicy mayo and a green onions.
