Hawker-style Chicken Wings

INGREDIENTS
Chicken- 1 pack of Sadia One by One Chicken Mid Joint Wing, thawed
- 2 tsp caramelised dark soy sauce
- 2 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tbsp fish sauce
- 1/2 tsp ground white pepper
- 1/2 tsp salt
- 1/4 shallot
- 2 tbsp chopped garlic, about 4 cloves
- 1 tbsp (10g) ginger
- 2 tbsp sesame oil
- 1/2 tsp chili flakes, optional
METHOD
- For the ginger-garlic paste, blend the ingredients (shallot, chopped garlic, ginger and sesame oil) in a blender until they form a paste.
- To make the seasoning sauce, mix the caramelised dark soy sauce, light soy sauce, oyster sauce, fish sauce, ground white pepper and salt in a separate bowl.
- In another large bowl, add the seasoning sauce and ginger-garlic paste with the Sadia One by One Chicken Mid Joint Wings. Marinate thoroughly and seal with a cling wrap the bowl. Allow the bowl to marinate for an hour.
- 15 minutes before the chicken is done marinating, start to preheat the oven to 200°C.
- Then, transfer the marinated wings to a baking sheet and grill them in the oven for 10 minutes.
- Once done, place the grilled wings on a plate and squeeze some sliced lime or add sambal chili of your choice. Enjoy!
