Hunan Chicken Stir-Fry

INGREDIENTS

Chicken
  • Chicken 3 Joint Wing
Ingredients for Chicken Marinade:
  • 500g Sadia Chicken 3 Joint Wing
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
For the Sauce:
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp chili garlic paste (adjust to taste)
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • 1 tsp sugar
  • 1/4 cup chicken stock or water
​​​​​​​For the Stir Fry:
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2-3 dried red chilies (optional, for spice)
  • Green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish

METHOD

  1. Marinate the chicken wings in soy sauce, rice vinegar, cornstarch, and sesame oil. Let it sit for at least 20 minutes.
  2. Prepare the sauce by mixing soy sauce, oyster sauce, hoisin sauce, chili garlic paste, cornstarch slurry, sugar, and chicken stock. Set aside.
  3. Heat oil in a wok or skillet over medium-high heat. Cook the marinated chicken wings for 5-7 minutes, turning occasionally, until golden and cooked through. Remove and set aside.
  4. In the same pan, heat more oil and stir fry garlic, ginger, and dried red chilies (optional) until fragrant.
  5. Add bell peppers, broccoli, and carrots. Stir fry for 3-4 minutes until tender crisp. 
  6. Combine chicken, vegetables, and sauce. Toss to coat and let the sauce thicken for 2-3 minutes as it simmers.
  7. Transfer to a serving plate, garnish with green onions and sesame seeds, and serve hot with steamed rice or noodles.
