Kadai Chicken (Stir-fried Chicken)

INGREDIENTS
- 1 pack Sadia One by One Chicken Breast (Skinless), cut into 1-inch pieces
- 2 tbsp light cooking oil
- 1 tsp whole cumin seeds
- 1 tbsp ginger, finely chopped
- 1 tbsp garlic, finely chopped
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1 tsp cumin powder
- 1 tbsp coriander powder
- 1 tbsp tomato paste
- 1 large-sized onion, sliced
- 1 medium-sized green bell pepper, sliced
- 2 medium-sized tomatoes, cut into wedges
- Salt to taste
- Cilantro leaves for garnishing
- A squeeze of lemon
METHOD
- Heat oil in a large non-stick wok and fry cumin seeds, ginger and garlic for a few seconds till fragrant. Add in spices and tomato paste, and mix well
- Add in chicken pieces and stir-fry with the spices for 2-3 mins till lightly browned along the edges
- Stir-fry onions for 2-3 mins till they start to soften
- Add the bell peppers and tomatoes. Season with salt, and mix well. Cook it covered for 5-6 mins till the chicken is completely cooked through
- Garnish with fresh cilantro leaves and a squeeze of fresh lemon juice. Serve warm.
