Oxtail Stew

INGREDIENTS
- 1 packet Sadia Beef Tail
- 1 carrot
- 2 chopped tomatoes
- 1 onion
- 2-3 slices ginger
- 2-3 pieces of bay leaf
- 2-3 sticks of cinnamon
- 3 cloves of garlic
- 2 tbsp salt
- 1 tbsp sugar
- Pinch of black pepper
- 1 tbsp oil
METHOD
- Add beef tail and ginger to a pot of cold water. Bring to a boil and let boil for 5 min. Pour away water and ginger and set aside beef tail.
- In the same pot, heat up oil in pot and add garlic, onion and carrot. Stir fry for 5 min.
- Add chopped tomatoes and stir fry till it becomes a paste.
- Add boiling water to the pot with cinnamon, bay leaf and beef tail and let simmer over medium heat for about 40min.
- Switch fire down to low and slow cook for another 30min. Add sugar salt and black pepper to taste before serving.
