Pineapple Fried Rice with Honey Roasted Chicken Leg

INGREDIENTS
Honey chicken- 1 piece of Sadia Honey Roasted Chicken Leg
- 1 servings of cooked rice (you may use leftover rice)
- 1 ½ tbsp oil
- 1 scallions, white parts and green parts thinly sliced
- 1/2 small red bell pepper, diced
- 1 tbsp minced fresh ginger
- 1/2 small red or green chili
- 1 cup diced pineapple, preferably fresh
- 1 tbsp soy sauce
- 1 tbsp fish sauce (or oyster sauce)
- 1/2 tsp sesame oil
METHOD
- Air fry Sadia Honey Roasted Chicken as per packaging instructions.
- While chicken is cooking, in a wok or a large skillet over high heat, warm 1½ tbsp oil. Add the scallions (the white parts), red bell pepper, ginger, and chili. Saute for 1-2 minutes or until it lightly sizzles and is fragrant.
- Next, add the cooked rice and stir frequently for about 3-5 minutes. Then, add pineapple, soy sauce and fish sauce (or oyster sauce) and stir for 2-3 minutes until the rice is well coated and heated through. Once done, turn off the heat.
- On the pan, sprinkle the green scallion and drizzle the rice with sesame oil. Plate the rice. Add the Sadia Honey Roasted Chicken Leg on the rice once its cooked! Enjoy!
