Rice Cooker Chicken Frittata

INGREDIENTS
- 3-4 eggs
- 1 cup of vegetable, chopped or sliced
- 1/2 cup of cheese
- salt and pepper to taste
- 2 x diced pepper grilled chicken breast
- bread toast (optional)
METHOD
- Spray inside of rice cooker with non-stick cooking spray.
- Separately, heat up chicken breast according to microwave instructions
- In a large bowl, beat the eggs.
- Add in the vegetables and chicken
- Salt and pepper according to taste.
- Pour mixture into rice cooker. Sprinkle cheese evenly on top.
- Cover the lid of the rice cooker and press the "cook" button.
- Cook the frittata for approximately 15 mins or until the eggs are set.
- When cooked, transfer frittata carefully with a spatula onto a plate.
- Cut into slices and serve with toast (optional)
