Sesame Chicken Meatballs

INGREDIENTS
Meatballs- 1 pack Sadia Minced Chicken
- 1 stalk spring onions, plus 1 stalk for garnish
- 1 egg, beaten
- 20g breadcrumbs
- 1 cloves garlic, finely chopped
- 1 tsp toasted sesame oil
- 2 tsp low-sodium soy sauce
- Freshly ground black pepper
Sauce
- 1 tbsp cornstarch (add 3 tsp of water)
- 250ml chicken stock
- 2 tbsp low-sodium soy sauce
- 1 clove garlic, chopped
- 2 slices of ginger, chopped
- 2 tbsp pure honey
- 1 tsp toasted sesame oil
- Cooked rice
- Toasted sesame seeds, for garnish
- Oil, for frying
METHOD
- Combine chicken, spring onions, egg, breadcrumbs, garlic, sesame oil, and soy sauce in a bowl. Season with pepper. Form about 10 meatballs from the mixture and set aside
- Heat oil in a skillet over high heat and fry meatballs until cooked through
- In a large saucepan, whisk in chicken stock, honey, soy sauce, garlic, ginger, honey, and sesame oil. Cook over medium-low heat and whisk
- When the mixture starts to bubble, add in the cornstarch and water mixture into the saucepan. Stir continuously for about 1 to 2 minutes, until it thickens. Remove from heat
- Add meatballs and toss to coat
- Serve over rice, garnished with spring onions and sesame seeds
