Sesame Oil Chicken and Mushroom Rice

INGREDIENTS

Chicken Marinade
  • 250g of Sadia One by One Chicken Breast
  • 1 tsp salt 
  • Few pinches of pepper 
Ingredients 
  • 4 dry shitake mushrooms, rinse and soak in water overnight and retain 230ml mushroom water
  • 1 cup rice, rinsed and drained
  • 2 tsp cooking oil
  • 2 tsp minced garlic
  • 15 slices ginger
  • 1 tbsp light soya sauce
Toppings 
  • 2 tbsp sesame oil
  • 2 stalks spring onions, diced

METHOD

  1. Defrost 250g of Sadia One by One Chicken Breast and chop them into chunks. Marinate with 1 tsp salt and few pinches of pepper for at least 30 mins before cooking.  
  2. Heat up cooking oil in a pan and saute ginger and garlic until fragrant. 
  3. Add in the marinated chicken breast into the pan and stir fry briefly. Add in light soya sauce. Stir-fry until the chicken is no longer pinkish.
  4. Add mushrooms into the pan and stir fry briefly.
  5. In a rice cooker, add the washed rice, cooked ingredients and mushroom water and set the cooker to normal cooking mode.
  6. Once cooking is completed, add sesame oil and spring onions. Mix well and serve hot immediately to enjoy!
