Sesame Oil Chicken and Mushroom Rice

INGREDIENTS
Chicken Marinade- 250g of Sadia One by One Chicken Breast
- 1 tsp salt
- Few pinches of pepper
- 4 dry shitake mushrooms, rinse and soak in water overnight and retain 230ml mushroom water
- 1 cup rice, rinsed and drained
- 2 tsp cooking oil
- 2 tsp minced garlic
- 15 slices ginger
- 1 tbsp light soya sauce
- 2 tbsp sesame oil
- 2 stalks spring onions, diced
METHOD
- Defrost 250g of Sadia One by One Chicken Breast and chop them into chunks. Marinate with 1 tsp salt and few pinches of pepper for at least 30 mins before cooking.
- Heat up cooking oil in a pan and saute ginger and garlic until fragrant.
- Add in the marinated chicken breast into the pan and stir fry briefly. Add in light soya sauce. Stir-fry until the chicken is no longer pinkish.
- Add mushrooms into the pan and stir fry briefly.
- In a rice cooker, add the washed rice, cooked ingredients and mushroom water and set the cooker to normal cooking mode.
- Once cooking is completed, add sesame oil and spring onions. Mix well and serve hot immediately to enjoy!
