Spicy Beef and Capsicum Stir-Fry

INGREDIENTS
- 400g Sadia Beef Stir-Fry
- 3 cloves garlic, minced
- 2 slices of ginger, minced
- 220ml coconut milk
- 2 tbsp sugar
- 1 tbsp Sriracha chilli sauce
- 1/2 tsp grated lime zest
- 2 tbsp lime juice
- 2 tbsp canola oil
- 1 large sweet red capsicum, julienned
- 1/2 red onion, sliced
- 2 stalks spring onions, sliced
- Salt and Pepper to taste
METHOD
- In a large bowl, marinate beef with ginger, 2 garlic cloves, pepper and 1/2 teaspoon salt for at least 15 minutes
- In a small bowl, whisk coconut milk, sugar, chili sauce, lime zest, lime juice and salt until throughly incorporated
- In a large skillet, heat 1 tablespoon oil over medium-high heat. Add beef and stir-fry until no longer pink, 2-3 minutes. Remove from pan
- Stir-fry red pepper, red onion, jalapeno and remaining clove of garlic in remaining oil just until vegetables are crisp-tender, 2-3 minutes.
- Stir in coconut milk mixture; heat through. Add beef, stirring occasionally
- Garnish with spring onions
- Serve hot with steamed white rice
