Wintermelon Chicken Soup

INGREDIENTS

Chicken
  • 1 pack of Sadia Chicken Thigh
  • 1 cup water for blanching
Ingredients 
  • 200g winter melon, diced
  • 1 large carrot, diced
  • 4 pcs red dates, sliced into quarters
  • 1 tsp goji berry
  • 2 tsp barley
  • 1/2 inch ginger, sliced
  • 2 tsp dry scallops
  • 1/2 tsp salt
  • 2 cups water 
Garnishing 
  • Spring onions, chopped
  • Chilli sauce for dipping

METHOD

  1. In a large soup pot, start with blanching the Sadia Chicken Thigh by boiling for 5-10 minutes over medium-high heat with 1 cup of water.
  2. Skim any impurities that rise to the surface. Then, drain and discard the water.
  3. In the same soup pot, add in winter melons, carrots, red dates, barley, ginger, dry scallop, and 2 cups of water and simmer for 30 minutes over medium heat. 
  4. Next, add the goji berries and salt into the soup. Stir gently to mix well and simmer for another 5 minutes.
  5. Remove from heat and garnish with spring onions. Serve the hearty soup with some rice and a small bowl of chilli sauce for dipping. Enjoy!
