Wintermelon Chicken Soup

INGREDIENTS
Chicken- 1 pack of Sadia Chicken Thigh
- 1 cup water for blanching
- 200g winter melon, diced
- 1 large carrot, diced
- 4 pcs red dates, sliced into quarters
- 1 tsp goji berry
- 2 tsp barley
- 1/2 inch ginger, sliced
- 2 tsp dry scallops
- 1/2 tsp salt
- 2 cups water
- Spring onions, chopped
- Chilli sauce for dipping
METHOD
- In a large soup pot, start with blanching the Sadia Chicken Thigh by boiling for 5-10 minutes over medium-high heat with 1 cup of water.
- Skim any impurities that rise to the surface. Then, drain and discard the water.
- In the same soup pot, add in winter melons, carrots, red dates, barley, ginger, dry scallop, and 2 cups of water and simmer for 30 minutes over medium heat.
- Next, add the goji berries and salt into the soup. Stir gently to mix well and simmer for another 5 minutes.
- Remove from heat and garnish with spring onions. Serve the hearty soup with some rice and a small bowl of chilli sauce for dipping. Enjoy!
